Ingredients
- 1 cup soft white wheat
- 1 cup all-purpose unbleached flour
- 1 cup sourdough starter
- ½ cup kefir or buttermilk
- ½ cup cold butter
- 1 tsp baking powder
- 1 tsp salt
- ½ tsp baking soda
Instructions
- In a large mixing bowl combine flour, baking powder, salt and baking soda.
- Cut the butter into the flour mixture with a pastry cutter until mixture resembles coarse crumbs.
- Add the sourdough starter and kefir/buttermilk. Adjust your flour depending on how thin your starter is.
- Mix gently until you have a dough. Turn dough out onto well-floured surface and knead into a soft ball. Don’t over knead.
- Gently roll dough out to about ½ inch thick.
- Cut biscuits with a biscuit cutter. Place biscuits a couple inches apart on a buttered baking sheet.
- Bake at 400 for 12 – 15 minutes or until golden brown. Yield is a dozen biscuits.
