Soft White Wheat Sourdough Biscuits

Ingredients

  • 1 cup soft white wheat
  • 1 cup all-purpose unbleached flour
  • 1 cup sourdough starter
  • ½ cup kefir or buttermilk
  • ½ cup cold butter
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ tsp baking soda

Instructions

  1. In a large mixing bowl combine flour, baking powder, salt and baking soda.
  2. Cut the butter into the flour mixture with a pastry cutter until mixture resembles coarse crumbs.
  3. Add the sourdough starter and kefir/buttermilk. Adjust your flour depending on how thin your starter is.
  4. Mix gently until you have a dough. Turn dough out onto well-floured surface and knead into a soft ball. Don’t over knead.
  5. Gently roll dough out to about ½ inch thick.
  6. Cut biscuits with a biscuit cutter. Place biscuits a couple inches apart on a buttered baking sheet.
  7. Bake at 400 for 12 – 15 minutes or until golden brown. Yield is a dozen biscuits.
