Sorghum Drop Biscuits

Mix dry ingredients and cold butter until crumbly, add buttermilk for a soft dough. Drop spoonfuls into a buttered pan and bake until golden.

Ingredients

  • 8 tbsp butter
  • 2 cups soft red wheat flour
  • ½ cup sorghum flour
  • 1 tbsp baking powder
  • 1 tsp sugar
  • 1 tsp salt
  • ½ tsp baking soda
  • 1 cup buttermilk

Directions

  1. Preheat oven to 425°F. Butter a large cast-iron skillet or large cake pan. Set aside.
  2. Mix all dry ingredients together in a bowl. Using a pastry cutter or a fork, incorporate the cold butter until your mixture resembles coarse crumbs. Slowly add the buttermilk, creating a shaggy, soft dough.
  3. Using a large spoon, drop 16 equal-sized mounds into the prepared skillet or cake pan, spacing them about an inch apart. Bake for 20 minutes until golden brown.
