Unfed Sourdough French Loaf

Create a delicious unfed sourdough French loaf by mixing ingredients, letting the dough rise, shaping, and baking in a preheated Dutch oven for a perfect crust.

Ingredients

  • ½ cup sourdough starter unfed or discard
  • ¾ cup lukewarm water
  • 1 ¼ salt
  • 1 teaspoon sugar
  • 1 teaspoon instant yeast
  • 1 cup fresh milled hard red wheat
  • 1 ½ cups all-purpose flour

Directions

Combine all ingredients. Knead by hand or machine until a smooth soft dough. Add a bit more flour if needed some unfed starters get very soupy. Cover and let rise until doubled around 1 ½ hours. Shape into loaf on parchment paper, or proofing basket.  Cover and let rise until puffy and doubled in size. Around an hour depending on the temperature of your kitchen. Preheat oven with cloche or Dutch oven in to 425 degrees. Turn dough onto parchment paper if in proofing basket. Score loaf with lame or sharp knife.  Pick up dough by the parchment paper and place into heated cloche or Dutch oven. Cover and bake for 15 min. Remove lid and bake another 10 – 12 minutes.
