Ingredients:

  • 2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup fresh-milled whole grain flour (All Purpose)
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 4 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 1 1/2 pounds baby potatoes, halved or quartered if large
  • 1 1/2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • 2 bay leaves
  • 4 cups low sodium chicken broth
  • 1 cup frozen peas
  • 1/4 cup heavy cream (optional)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  1. Prep the chicken: Season the chicken pieces with salt and pepper. In a large pot or Dutch oven, heat a tablespoon of olive oil over medium-high heat. Brown the chicken in batches, about 3-4 minutes per side, then transfer to a plate and set aside.
  2. Sauté the veggies: In the same pot, add more olive oil if needed and sauté the onion, carrots, and celery for about 5 minutes until they begin to soften. Add the minced garlic and cook for an additional minute until fragrant.
  3. Create the gravy: Sprinkle the fresh-milled whole grain flour over the vegetables and stir to coat. Cook for 1-2 minutes, allowing the flour to brown slightly and absorb the flavors of the vegetables.
  4. Build the stew: Slowly stir in the chicken broth, scraping up any brown bits from the bottom of the pot. Add the browned chicken back into the pot, followed by the potatoes, thyme, rosemary, paprika, and bay leaves. Bring the mixture to a simmer.
  5. Simmer and cook: Reduce the heat to low, cover the pot, and let the stew simmer for 25-30 minutes, or until the chicken is tender and the potatoes are cooked through. Stir occasionally.
  6. Finish the stew: Add the frozen peas and heavy cream (if using) to the stew and stir to combine. Let the stew simmer for an additional 5 minutes. Taste and adjust the seasoning with more salt and pepper if needed.
